Hello, Here is a well-liked recipe by my clients:
1 3/4 c. flour
1/2 tsp. baking powder
3/4 c. butter (Use Soy Margarine for dairy free, not canola OIL,need margarine)
1 pkg. sugar free Jello (any flavor)
1 egg
1 tsp. vanilla
Cream butter and Jello, mix in eggs and vanilla. Add flour and baking powder. Roll out dough 1/2 inch thick and cut in shapes. Bake at 350 degrees for 8 minutes.

I am terribly sorry about the sugar substitution situation. I only like my clients to use Stevia, but not many products have Stevia in it.
XXXXXXX I know you are having a difficult time adjusting to your diet. I am here to help whenever possible. You didn't receive any dietary counseling did you? Let me know if I can help you further, I once was certified as a Diabetic Educator.
As far as the diabetologist you corresponded with, does Dr. Jeyapathy sound familiar? I am almost certain this is the doctor you were trying to find as I scan the names of the doctors who previously answered your queries.
XXXXXXX I wish you happy holidays and please feel free to come back to myself or Dr. Jeyapathy if you need anything else. Regards, XXXXXXX J. Shattler, MS,RDN
You're welcome XXXXXXX

Let me tell you how to find RDs in your area in case you are not happy with the one you have an appt. with. Use your browser to search for eatright.org. That is our Academy's website. You may search for local RDNs by plugging in your zip code and names will come up within so many miles from your home of RDs and their specialties as well as their contact information.
Good luck and Happy Holidays.
Please close the question out and rate if we are finished.
