Question: Can someone hitting you in the back of the head with their hand (light to medium force ) cause any flattening of the back of your head?

It is not likely that the skull bone will be altered by a hit to the head using hand. There is no means to cause any forceful damage to the skull let alone flattening it. So no need to worry.

No, you can't cause any such mentioned events by just hitting some one using a hand. Hitting with a hand more often than not causes benign harmless injury.
