Firstly your current problem is neither related to pantoprazole side effects or Gastritis.History of cough with tinnitus is suggestive of pharyngitis/Upper respiratory tract infection.
You have to get yourself investigated by your doctor for that. He would look for soreness in throat would auscultate by stethoscope to hear for the sounds of lung.
Secondly Gastritis can't be cured unless it is caused by a bacteria named H.pylori.Strict dietary control with regular antacids are required to keep Gastritis in control.Its fully controllable but non curable.
Just taking pantoprazole for few days and then cold turkey may cause even rebound gastritis.
Fatigue etc is due to pharyngitis/Upper respiratory tract infection.Your doctor would prescribe you medication for the same. Usually it's caused by virus and treatment is not required( symptomatic treatments is required).
Pantoprazole 40 mg is too low a dose to cause side effects. However in rare of rare cases they may cause minor side effect those patients can switch over to H 2 blockers like Ranitidine 150 mg twice daily.Well I don't think that pantoprazole has any relation to problems in your case.
As per protocol Antacids are tapered off very slowly. Cold turkey is usually not suggested and usually symptoms revert back with full intensity.
