Brief Answer:
Do a throat culture.
Detailed Answer:
Hello dear, welcome to Ask a doctor's service.
I read your query and here is my advice.
I see the photo you attached and your throat looks red , tonsils looks red but normal in size and not swollen, the tongue is white and it looks like thrush due to amoxicillin usage. Also the pain you feel on throat and ears may be related to pharyngitis. The swollen lymph nodes may be related to the infection.
You can do a throat culture if possible to
check for cocci and candida an see if antibiotics are needed or not.
I think that you are not fully recovered.
You can take antiinflammatory drugs such acetaminophen for pain. Take decongestants such pseudoephedrine and phenylephrine for congestions on ears and throat. Use saline water gargling to help reduce inflammation.
Hope I have answered the question.
Let me know if I can assist you further.

Would this cause my glands under chin to stay inflamed, and yes it’s from amoxicillin should I just carry on with normal ibruprofreon etc from home x
And how long should this last I thought it may be mono mono
Brief Answer:
Also get tested for mono.
Detailed Answer:
You need also to do a total blood count with formula and get tested for mono since you suspect that you have enlarged lymph nodes on different regions in your body ( under chin and in arm pit). Throat culture should be done also .
Take Tylenol or Ibuprofen for pain .

Brief Answer:
Not much related to anxiety
Detailed Answer:
Taking count of the current situation of pandemic covid19 anxiety is present in many people and you may feel it too. I don't think that the tongue situation is related to anxiety but to amoxicillin usage.
You can use vitamin C,and vitamin B complex to help you increase immunity and help with anxiety.
Continue gargling with saline water. Stay at home avoiding going out unnecessarily.
