I can understand your concern
As you explain the situation I don't think this is a sign of sleep apnea
Usually if it is the symptoms are continuously and worsen with time meanwhile you explain that your concern is not every night. Sleep apnea happens frequently in obese patients smokers and with comorbidities (diabetes heart diseases).
In my opinion these are signs of overstressed or anxiety situation.Try to use simple tranquilizants such as Xanax 0.25 mg once before sleeping when you feel that you need it.
And avoid caffeine energetic drinks smoking, do walking activities and you will feel better.
If no improvement with the above than please consult your doctor.
