Intolerance to wheat protein means that intestines get swollen and inflamed when wheat is ingested. Then there are symptoms of indigestion like bloating, loose motions, feverish feeling etc.
If you do not have such symptoms, then it can ignored.
Basically it may be due to body's reaction to another protein as well for example bird droppings or contaminated drinking water. Make sure that you are inhaling unpolluted air and drinking cleaner water with low TDS.

When someone inhales organic dusts, hypersensitivity can develop to it. Such a scenario is usually seen in occupations involving organic dusts like hay, wheat and other grains, birds, animals, grass pollen etc. When body reacts to these dusts, it may also react to proteins like wheat protein. Such a scenario may affect both respiratory and gastrointestinal systems.
If you are not exposed to such dusts, then another possibility of allergies/anaphylaxis that cause raised IgE for wheat protein as well.
Otherwise wheat allergy (like any other food allergy) can cause respiratory symptoms as well.
Wheat allergy and intolerance have differences.
Since there is swollen throat, you will need treatment on the lines of allergy and anaphylaxis. You can omit wheat for few days and see if symptoms improve. Meanwhile you can take other foods that are gluten free like rice, milllets, beans etc. Obviously its impossible to eliminate wheat completely from ones diet. In most cases elimination of wheat is not needed.
