Why don't they list the percentages of each wbc on the lab results
They can be counted in automated instruments or manually.

I have gone through your question. I can understand your concern.
WBC differential count is calculated nowadays in automated cell counter. Its base on light scattering priciple. Various three part, five part, seven part and nine parts counter are available.
By manually it can be calculated in microscope from morphology or WBC. 100 cells are counted and give as value in percentage.
Normal ranges for adults are given below.
Neutrophils: 40-70%
Lymphocytes: 20-40%
Eosinophils: 1-6%
Monocytes: 2-7%
Basophils: 0-1%
Most of the laboratory gives normal range against each WBC type.
