Whatever dose you were prescribed before would be a good place to start, but otherwise it would probably be safe if you started with 300 mg once, see how that effects you, then if there are no major side effects, you could increase to 300 mg three times a day, and gradually increase from there (doses as high as 1200 mg three time a day have been used, but often these doses have side effects and hopefully you will not need doses this high). It also depends on what you are treating exactly, so I am just giving you general dosing guidelines. This also assumes you don't have any kidney disease.
Side effects with gabapentin are common and include dizziness, drowsiness, difficulty walking, and fatigue, so I would watch out for those symptoms and decrease the dose if you are experiencing them.
