I carefully read your question and understand your concern.
Alcohol is generally contraindicated in patients taking metronidazole and probably that is why the doctor has asked you not to use alcohol while on treatment as it might cause a reaction with the medication. While you do not take metronidazole anymore that risk is not there.
On the other hand the fact that the diarrhea goes on this means that your bowel is needing time to regenerate so even if infection goes away with the metronidazole treatment the regeneration of the bowel epithelial layers might need longer and you might have diarrhea for longer. You should not continue to have blood or mucus with the diarrhea and the diarrhea should be getting less than in the beginning.
If not getting better and if you still have blood and mucus with the stools you will need another check as sometimes C.Difficile can be resistant to metronidasole and in this case treatment with some other antibiotics is needed.
Alcohol is not good for the stomach and the intestine, especially now that they are trying to recover from a severe infection like this one from C.Difficile.
So to conclude I would say:
1. My advice would be that you do not use alcohol even though the risk of interaction with metronidasole is not there if you are not taking metronidasole anymore. Alcohol really irritates the gastrointestinal system and might make diarrhea worse.
2. I would also recommend you to avoid milk as some milk intolerance might develop while we have an intestinal infection till the intestine regenerates well.
3. make sure you drink well and keep yourself hydrated
4. see a doctor if no improvement with the bowel movements or if still blood or mucus with the stools or you have any fever- resistant cases should be considered in this case.
