In my opinion there is no significant change in blood alcohol concentration in case of fungal infection. It may synthesis some alcohol products but they are not in large enough quantity to alter the concentration of alcohol in blood.
Infact according to a few physicians fungal infection may cause lowering of alcohol concentration in the body..
In my opinion there is nothing of big concern in this case you can use alcohol in allowed quantity and everything should be fine.

No there is no scientific research regarding that..
As i said, making alcohol isnt important as alcohol after being made by yeast has to enter blood stream to cause a significant effect which seldom happens , even if alcohol enters blood this is not a quantity large enough to cause a significant rise in blood alcohol levels...So there was never a need to do a scientific research on that as it would need a massive infection to cause slightest rise in alochol levels of body..
Off-topic i would like to share with you that alcohol is a very well established cause of candida and it makes infection more severe and causes delayed recovery so i would suggest you to try reducing quantity of alcohol you are consuming.
