Serum ferritin levels provide a measurement of iron storage. Normal values range from 10–500 ng/mL. Serum ferritin levels may be low in iron deficiency, and are often the first value of iron quantification to decrease (=ferritin value decreases before other values). it is possible that your ferritin level is low from chronic gastrointestinal bleeding. This may occur without obvious bleeding in the stool or other significant signs.
I do not think the vinegar significantly is playing a role here. I think it would be a good idea however to avoid consuming the vinegar for the time being.
i'm glad you're having endoscopy performed. This may ultimately lead to the discovery of a possible source of gastrointestinal blood loss. I agree with taking the iron supplement Tatian for now until you have all of your testing completed.
