Have seen your details and I appreciate your concern.
Unfortunately there is no cure of gastritis till date in modern medicine so best way to keep things in control is lifestyle modification.
If you would take citrus fruits,alcohol,oily food and food which are processed that too empty stomach gastritis would
occur.
Long term use of antacids is not advised due to adverse profile on kidney functions.
Best way is to keep a check on your diet.
Have a simple home cooked diet 95% of times rest 5% times you can take antacid before having citrus fruits and cofee etc.
The only treatment which medical science has is to give long term antacids sometimes for full life but I'm most of the cases with a proper diet(less salt less oil and spices,no alcohol or smoking).Things get fine automatically.

See gastritis is purely a life style disease.
Unfortunately it's not possible to revert the sensitivity to particular food but yes controlled eating can be done like if you feel that taking cofee 2 times a day is increasing your symptoms reduce it to once a day of that too does not help make it once alternate day...The same theory goes with all items whiçh causes your symptoms to flare up.
Yes if acid production would be excess then doudenal fluids would not neutralise that acid and this acid is going to destroy good gut flora which would cause excess gas production flatulence etc.
See you have to understand that every thing is linked.
Yes you can take zinc better is to take ranitidine as and when required.
Keep a control on your diet.
Try to follow DIP diet(YouTube) if possible for a week and see the difference.

Sorry for a very delayed reply that was due to covid infection,
As far as your query regarding intermittent fasting is concerned there is no scientific proof that it would be helpful.
As far as modern medicine is concerned you should follow a clean diet as suggested above.
