Coughing while you are sleeping may be due to many different causes, and it may be that some saliva irritated the larynx and triggered the coughing, or there could be many other benign causes. But if it is just a one-time event, I would consider it normal and no reason to be concerned or need to do any further evaluation.
If in the rare circumstance it was the beginning symptoms of a progressive or chronic condition, it would always develop slowly, and would not all of a sudden cause choking or be life-threatening. Even if you had a condition such as spinocerebellar ataxia, this will typically develop gradually and would not cause such drastic problems all of a sudden.
For now I would just monitor your symptoms and see if they continue or progress. If you continue to have frequent coughing, you may need to be evaluated for common conditions such as post-nasal drip, and lung infection, or even acid reflux can cause this. If you feel like you are aspirating saliva, you may need to have your larynx looked at to make sure it looks normal.
But for now I wouldn't be concerned, and would just see how it goes.
