I carefully read your query and understand your concern.
It is very likely, in the beginning, in XXXXXXX you went through a viral infection that caused problems with the stomach (probably increased acid and reflux that caused heartburn and chest pain) and also the blocked ears with dizziness. This is normally self-limiting and is expected to be better within a few weeks, as it has happened in your case.
The throat tightness seems to be there for 2 weeks now. This generally may happen with throat muscle spasms, especially if this happens intermittently ( not every time you eat). In this case, it may be the acid reflux that may contribute to this and you may take omeprazole 40 mg 30 minutes before breakfast and try to chew your food well before swallowing.
If the throat tightness is not better with this treatment in 1-2 weeks or you notice any worsening (if it is more frequent or it is continuous or it progresses for other food that did not seem to be a problem previously) you will need to see a doctor and in this case examinations of the esophagus are needed (endoscopy, barium enema, manometry, etc).
As for the skin itchiness, it is important for us to know if there are lesions as well or only itchiness. If lesions are present please upload a couple of images so we can examine them and better determine the cause. Jaundice or weight loss are very important to be reported as well.

I fully understand your concern related to the cause of your symptoms.
On the other hand, the fact that you do feel better already and that the throat is a bit Rex, it is reassuring that very likely acid reflux is causing the symptoms.
I would recommend you to eat frequent small amounts of food and not eat or drink 3-4 hours before bed time.
You may raise the bed head with bricks so you are not so flat, avoid coffee, alcohol and smoking and also fast food, fried fatty food as these may make the throat worse.
If you do not notice a full important in a total of 4-5 weeks from treatment with Pantoprazole then an endoscopic examination may be indicated.
As for the uvula, it needs a Doctor to check it but generally patients with n9 palsy have changes in voice (nasal speech).
