Suggest Diet To Control Insulin Rebound

Question: My husband chronically falls asleep after dinner just about every night around 8pm. He is 6ft 3in and 245 lbs. He has that genetic belly. He does work out hard at the gym 4days a week on a stair climber for 45min to an hr. I can't convince him to do 30 min aerobics and 15-20 min weights to speed his metabolism. He sleeps well. I am just wondering if there are certain foods that I can cook for him to control that insulin rebound. Also, any tips to convince him that developing lean body mass will help. If there is an article I can show him. I am a registered nurse and his reply to me is that he feels since he is working so hard on the stairs that he'll eventually loose the fat in the middle. He is 59yrs old. I know this is a difficult one but if you could just point me in the right direction to help his education and tell me which foods are more likely cause the insulin rebound. I know the obvious white flour and hi simple sugars. Thank you so very much for anything you can do.
