Despite your medical problems, which could worsen if you need to gain weight, I can given you certain recommendations. But I advise you not to gain unnecessary weight, unless you can find compelling reasons.
Arthritis is going to worsen along with your sleep apnea and loosing weight with arthritis and abnormal sleep pattern at a later stage will be very difficult.
These are few things I usually recommend to my patients.
1. Eat more starchy foods - eg: foods like potato
2. Eat multiple small meals - Due to age, digestion would be a problem. multiple small meals can increase calorie intake.
3. Avoid junk foods - Junk foods can cause nutritional deficiency and can lead to mal-absorption and gastro intestinal disorders. If you suffer from any diarrhea, you may loose lots of weight and can lead to weakness.
4. Check you lipid levels. If normal you can try healthy fats like egg yolk, coconut oil, meat with animal fat - Try eating whole boiled eggs
5. food rich in calories like cheese, energy bars, peanut butter, extra fat in oils like olive oil and bananas.
6. Avoid excess nutritional supplementation as it can affect your digestive system and can result in diarrhea or vomiting
7. A good sleep is necessary.
8. Check you thyroid profile. If it is high, it could have caused your weight loss. you need to get it corrected.
9. If you can, try gaining muscle mass by exercising with weights. If you are working out, you need to have a good protein diet. Minimum protein of 1.5g/kg body weight needs to taken normally. If you need to gain weight with muscle building you need to take more than that.
10. Other food you can try are lean red meat, nut butter, whole fat milk, fruits (mango, banana, pine apple), dry fruits and nuts.
Avoid junk foods and maintain a proper nutritional diet.
Check your body mass index and if it is below 18.5, then you can think of the above.
