Question: I have this thick mucus in my throat which is worse when I eat. It seems to cause a tickle in my throat resulting in a great deal of coughing.

I am so sorry to hear about this thick mucus that you have reported. This is probably caused by mucus building up at the back of your upper respiratory passages. As it drips to the throat, it causes irritation and explains why you have a cough. I will suggest that you try mucomyst for the mucus buildup. If this fails to address the problem, then I suggest that you go ahead and see an ENT specialist for more comprehensively examination and maybe investigations.
