Cervical stenosis is simply a spine compression on the neck area. Such compression is usually caused by spine disc herniation. Please try to imagine a tube with something inside. Now when you push one of the tube wall there will be less room inside the tube and the thing inside will be compressed.
Hand tingling and numbness can be caused by cervical stenosis indeed. However similar symptoms can appear due to carpal tunnel syndrome. This issue is caused by a compression of median nerve in the wrist area.
First 3 fingers are mostly affected so the tingling and numbness is present in them only. The pain usually gets stronger in the night.
For cervical stenosis you should have spine MRI done. For carpal tunnel syndrome, wrist ultrasound and EMG should be done.
Both conditions can be treated with surgery.

Surgery is usually the last step. Physical therapy,if helps, is a good choice so the surgery wont be ever necessary. Hard to tell how your pain will be acting after PT. It can disappear for a long time or come back really quick. It all depends how advanced are spine changes.
Diet has nothing to do with this issue. But physical activity does. Pool swimming is what can help a lot.
Usually pain is on one side only. It should go away from shoulder after PT.
