Question: What are the chances of catching HIV from having unprotected sex for the first time?
And when do the flu like symptoms and rash appear?
I had unprotected sex for the first time and had flu like symptoms 5 days later and rash on upper body 2 days after flu like symptoms appeared. I never had fever and the rash went away after 5 or 6 days.

If anyone is positive than there are very high chances to get an infection with unprotected sex. Flu like symptoms and rashes are not related to HIV at this point of time because opportunistic infections in HIV take some time to develop after you get infected. I will advice you to go for HIV testing as per protocol as you had an unprotected sex.

The guy I was with said he got tested a few months ago and said he is negative. As for me, it was my first time to have unprotected sex so I am assuming I am negative too.
I think I will need to get tested as I do not know the guy very well.

You should go for DNA PCR or P24 antigen test or RNA PCR Qualitative Assay.

Detailed Answer:
Dear XXXX, which test is to be done depends on time period when you had the incidence with that guy because antibody against HIV in the presence of infection would appear in the blood by 6-8 weeks and may be delayed up to 3 months. This period of 6 weeks to 3 months is known as window period for HIV. The antibodies are detected by the tests like ELISA or Western blot. If you want to be tested earlier in the window period, then you can go for the antigen tests like DNA PCR, P24 antigen test or RNA PCR Qualitative assay. All these tests will give accurate result within 3-4 weeks. So go for any one of them. Thank You
