This is an excellent question and I will work on providing you with some information and suggestions. Regarding coconut water I don't think we have enough data to Fermily support this as a potential treatment for improving low sodium levels.
One of the gold standard recommendations for low-sodium treatment is fluid restriction and I imagine your doctor has talked to you about that. Your doctor probably recommended that you limit your water consumption to no more than 1.5 or 2 L per day. This will generally help to stabilize sodium level and hopefully improve it.
medications can also affect sodium levels and I am sure that your doctor has looked at your medication regiment to determine if there is anything that might be contributing to a low sodium level.
coconut water might be interesting to trying to see if this does help. I don't see much harm in doing that.
