But, we visited an endocrinologist who prescribed metformin. Both our GP and the pharmacist hesitated to recommend this form of treatment, so we are not doing it. Can you provide some information about why he might have prescribed this?

Metformin, it's given for diabetes from the endocrinologist's point of view. I'm assuming that they think that the pain comes from pancreas, which its located in the stomach level, and they think they by lowering the insulin resistance (which its treated by metformin) it will indirectly decrease the pain. And I think also that the GP and pharmacist have wondered why they are giving it to your wife if she doesn't give history of diabetes .
One other assumption, which I don't know if it's the case...Is your wife overweight ? Metformin is used for weight reduction when the overweight has hormonal influence.
Metformin is a safe medication. It may give some nausea in the first week of starting it, but the side effects of it are almost none practically.
