Question: Will anything change a persons height? Are their things that you can do during childhood that will increase/decrease a persons ultimate height? Sleep, exercise, anything?

Height is a genetically determined trait and can not be changed to with drugs or exercises. Parental and racial factors play the major role in a persons height.
In your case you are 16 and you might grow few more centimetres until you attain complete height.
There are complex orthopaedic procedures like illizarrow can be done to increase height, but I don’t think it is required in your case.
