my Gf is taking diane 35 for 21 consecutive days, yesterday was her last day of taking it. is it safe that we have sex today? for how long it will be safe?

If your girlfriend is on Diane 35 then after 21 days with in a week she will get her periods bleeding so since it is the last week it will be safe period to have sex and it will be safe till she gets her periods.
