Going to the gym it really excellent to tone up your body, but it doesn't really help you lose weight. Typically when you burn extra calories your body responds by making you hungrier and you just balance out your energy needs. When you stop going to the gym your body will be less hungry and again it will balance out your energy needs.

However, if you try to restrict your calories while you are burning more calories your body will slow down you metabolism and it will try to burn muscle. If you're lucky it'll burn some fat. You are right - when you stop your body will respond by trying to get all the fat back again.

Here's the bad news. Because you slowed down your metabolism you'll find that it is much easier for you to gain weight (fat). So also restricting your calories while going to the gym is a bad idea.

What you need to do to lose weight is to eat highly nutritious food - not starches and not sugars - but lots of non-starchy vegetables, good protein and good fats. You just lose weight naturally.

Going to the gym at the same time is a great way to tone your body.
