What Causes Swelling And Pain In Abdomen After Eating Food Containing Palm Oil?

I get a swollen and painful adbomen when I eat food that contains palm oil, any ideas? Also through an exclusion diet I have established that sodium nitrite (a common red meat preservative) causes rapid bowel movement and a leaky bowel, heard of this before?
