If I remember well, you had mentioned the hash brown potatoes in one of our earlier conversations and I had clearly emphasised against its consumption; so I see you have sort of a craving or addiction-like affliction for them :)
But as you can see, they can do you more harm than good, so please do keep away from them and everything else fried, especially as you will be going through a period without the medications.
We cannot really predict the status of your intestines currently, and another aspect you need to understand is that when you are on treatment hoping to help the intestines in recovery, you should not provide any stimulus in order to allow them to recover; and this takes time.
But if you take medications hoping to recover and at the same time consume poison (in reference to the hash browns, etc.) there is no way the medications will take effect.
In order to really understand the status of your intestines, we should first allow them to heal, and not consume anything that can cause a reversal in any progress it makes.
No, I do not think you should take 2 capsules if 1 capsule is doing the job. Please understand sir, that even if you take 5-10 capsules a day (never recommended), and continue to eat all the wrong things, you will never recover, so please do try and understand and develop a stronger will towards avoiding all such trigger factors for good.
At 78, you are just half way through sir :). Age is just a number, and you probably still have the best experiences and best days ahead of you. So stay strong, and please do try and follow my advise a little more religiously. :)

As long as you are not lactose intolerant, kefir is a good drink. You can also opt for a few fruit juices (preferably freshly made, but secondarily can settle for packaged ones as well), but best to avoid fruits like apples, pears, and watermelons (especially those whose skins are usually consumed to be avoided).
My knowledge on Iberogast is limited, as is its popularity; but it is a herbal mix and so I do not mind you trying it, and if it helps even slightly, then why not? :)
As for the drinks you mentioned, most of them are carbonated and so I would prefer you not having carbonated drinks as they can irritate the bowels in individuals with IBS.

1. Is the chicken broth/bullion store bought? As in, have you added any cubes of chicken stock or artificial flavouring in/to them? If so, then this stock can have various substances that can irritate your gut like sorbitol, mannitol, taurine, GMO, etc.
2. Scrambled eggs are fried, avoid this and replace with boiled eggs
3. Yes, as long as it is caffeine free then it is permitted sir :)
4. Out of all the items mentioned, I have only one thing to ask of you: Are they packaged or store bought or restaurant made? Because if they are, then they can all have various additives that can irritate your gut.
But if you can make them all at home without using any harmful additives, then they can all be eaten carefree. A little concern for the gravy used with the mashed potatoes, but then again it depends on how it is being made.
May I ask you a personal question sir? You need not answer if I am being intrusive; but do you live alone? Or do you have someone living with you? And do you cook at home always? Or take away, or order in, or eat out often?

Yes, do avoid the chicken broth; as for the bullions, it is not the gluten that we should be worried about, its the various other additives like Sorbitol, MSG, GMO, and various others that can be harmful, so I would recommend avoiding it sir.
Yes, the caffeine free tea should be okay, but do watch yourself for a while over its response.
Yes, fo purchase your peanut butter there as well, or if you have time and are a hardcore peanut butter lover, I can help with a homemade recipe that may be much safer.
Use fresh tuna for the tuna salad, fresh meat and not preserved meat for the pot roast, and basically everything fresh and not preserved and it should be fine for consumption.
Thank you for your understanding sir, but I only asked if you are alone to know if there is someone who can cook for you, and support you through a more strict diet regimen for your own safety. But I guess you will have to do most/all of the work, with only a very little help from me.
