Well, that's frustrating!
As you have, until recently, lost and maintained the weight loss of 60 lbs, I will skip the dietary recommendations for weight loss.
I do recommend though, that you go in to see your doctor. There, you should have an exam and have blood tests for thyroid function. Thyroid dysfunction affects the rate of metabolism, and can cause weight gain or loss. The doctor should also check to see if there are signs of fluid retention too.
If weight gain continues, then a test for excessive cortisol production should be done too, but with a 3-8 lb increase, I don't think it is necessarily warranted unless your physical exam indicates a need to test for it.
If you have been exercising more, it's possible that you have gained more muscle, as increased muscle mass weighs more than fat.
If you have not been exercising more, you may need to. As we get older, our metabolism tends to slow. Even though exercise, particularly in women, is not associated directly with weight loss, it can help increase our metabolism.
If you drink alcohol, limiting that can help too.
