Question: How can I best mitigate the "bloating" and burping that I get from a hiatal hernia? (I don't think there's any acid reflux involved.)

You need to take PPI with prokinetics.
You are already taking PPI Omeprazole.
Along with it you need to take prokinetics like Reglan or Itopride or Levosulpiride.

The following also should be done.
1. Weight reduction if obese
2. Avoiding coffee, citrus , tomatoes, fatty food
3. Eating multiple smaller meals.

Check your blood glucose levels as diabetes can cause gastroparesis and abdominal bloating.
