The response to treatment would depend on a few factors. It might too early however to think the treatment is not effective. Depending on the degree of lesions seen, you might have to take such treatment with proton pump inhibitors, like Omeprazole, for up to six weeks.
It is imperative not to underrate the non medication components of care, especially with regards to gastroesophagal reflux disease here. If neglected, the drugs on their own might not be very helpful. Your diet, not staying for a long time without eating, eating at regular hours, elevating the head side of the bed by about 5cm and avoiding foods like Caffeine and Coca cola. Avoiding spicy foods and alcohol are also important.
It is of interest to know if you also take drugs that irritate the stomach like Non steroidal anti inflammatory drugs and steroids.
It is very interesting the biopsy was ok. I do not think you need to be that bothered at this point in time since its too early to talk of treatment failure. Take treatment again for a couple of weeks. Associating an antiacid like MAALOX can be considered at some point. Life style changes as I propose, and not being the stressed could be helpful. You might have to see your doctor if after a couple of weeks and with good life hygiene, the symptoms persist for reevaluation and rethinking of the diagnosis. If not, for now, I think you are ok and need not bother.

I think the dosage of Omeprazole you are on is ok (40mg) for now. As you get better hopefully, the dosage might have to be reduced carefully to 20mg for the rest of the treatment course.
It is not really about a strict diet per say. You need of course just avoid gas producing foods like Cola, Caffeine and spicy foods and pepper that could irritate your stomach wall. Chocolates weaken at times the lower esophagal sphincter and could aggravate reflux and esophagitis.
You really need not think so much or get depressed. I am convinced with a sense of positive thought, being compliant to diet modifications and your medication, you will get better.

It is possible this could arise from the inflammation. It might be interesting to note that the signs and symptoms of gastric/esophagal inflammation might differ from person to person. It is interesting in your case since the diagnosis was already made with specific tests.
Not having heart burn does not on its own rule out the fact that you could have this conditions. Being nauseous is a commonly found associated feeling in esophagitis and peptic ulcer disease. It is interesting however to investigate the causes of chest pain in case after a proper follow up, symptoms do persist. However, its too early to think in that direction for now.
