As per your complain, feeling of hair struck in throat can be due to a few causes but if it occurs only when your throat gets dry then it is not probably due to the any hair..
Please answer the following questions so that I can guide you better..
1. Do you get the sensation only when your throat is dry or is it otherwise also present ?
2. As you said you are taking only liquids, so did you try to take solid food and found difficulty in swallowing or you did not try to eat solid food only ?
3. Is there any difficulty in swallowing liquids ?
4. Do you have the feeling of hair struck in throat when the throat is not dry ?
5. Do you have any medical problems or are you on any medications ?

1. When I get the sensation my throat and mouth def feel dry.
2. One day I was eating solids fine and then the next day I woke up with this fear. I feel so nervous to swallow solids.
3. No difficulty with liquids.
4.No the hair sensation never seems to come along with the mouth not being dry. If I think about it or read symptoms or diagnosis online it seems almost worse.
5. I completed the antiobitcs almost two weeks ago. no other medications.
6. No other symptoms - other than I do wake up in the middle of night with very dry mouth. I will say the dry mouth was a lot worse though a month ago when these symptoms started and I had the infection.
It looks like due to dry mouth and throat...

As per your answers it does not look like anything serious and just dry mouth and throat and anxiety is causing you all the problem..
But if you still want to confirm you can consult an ENT Physician and get a Laryngoscopy done..
I would suggest you to just relax and chill..
You are perfectly fine..
Just start eating gradually with semi solid food and then with regular solid foods, nothing will happen..
Drink plenty of water..
For reducing dryness you can chew sugar free chewing gum and tart candies..
Gargle with specialised mouthwash like Biotene..
You can also instil artificial saliva drops..
Start doing meditation and deep breathing exercises for reducing anxiety..
Think positive and keep yourself engaged in the works of your choice and with friends and family..
