7 weeks is enough time for endoscopy induced laryngitis to self resolve. It Might not Be associated With Endoscopy any more and could be a separate entity.

You have already taken amoxacillin and if it is still not helping then it's time to get some throat cultures for organism specifying and management accordingly. Low grade fever is the result of this laryngitis.

Yellow stools if are solid in consistency then it's fine. Bilirubin gives the color to the stools some times yellower some times greenish yellow. If consistency or frequency is not an issue then I believe there is nothing to worry About in this regard. GI history would have helped further to correlate with this stool symptom.

Right now you should visit a nearby otorhinilaryngologist and let them take it from here. You will be fine. No worries the symptoms are benign.
