Question: I'm a 36 year old female. Lately after/during eating my chest turns red. what could this be?

it seems like an allergic reaction. If it's itchy too then allergy is almost certain. Have you introduced anything new in your diet?
Does this rash come and go? Is there anything that makes it go away? Do you have rash elsewhere?
Any history of allergies?

I haven't anything I don't normally. Today I had a chicken XXXXXXX with peppers, cheese and chipotle. there was no itching but I did get a little hot feeling. this has happened alot recently

Food allergy may develop even years after eating the same food. New food obviously would have been more suspicious. The lack of a characteristic pattern or symptoms makes the diagnosis difficult but allergies are far more common than other potential causes (like autoimmune disorders, blood malignancies, etc). Trying an antihistamine may help. You should also consult an allergist or dermatologist for further investigation. Have you done any tests so far?

the redness will go away about 30 minutes after I'm done eating. i did have a recent widespread psoriasis flare with high rf factor and high crp. but they dismissed any rheumatoid disease and they do believe I have an autoimmune disorder but not sure if it's related

As I've told you in my previous answer this rash is not characteristic. Rashes that come and go so fast are usually related to urticaria which is related to allergies. The high RF does not mean much because it can be high in many diseases including autoimmune disorders but not limited to them. High CRP denotes inflammation but this is also another test that can be interpreted in many ways.

Another rash that comes and goes is caused by Still's disease (which is autoimmune in origin) and is usually accompanied by the onset of high fever. The rash comes with the fever and may disappear afterwards.
