I am so sorry to hear about this pain that you have been having. It is rather unfortunate that even after the surgery, your symptoms have not been able to be controlled. I very much hope we get to identify the cause and managed accordingly or at least provide measures to help ease this pain.
Your symptoms are very suggestive of gall bladder and biliary tract disease. With the gall bladder removed already, the tract that transports bile into the intestines has to be investigated closely. Pain related with this would tend to occur a few hours after eating and it would be more severe when you eat fatty foods. This would unconsciously limit how much food you would like to eat and the end result would be a progressive and gradual weight loss. Also, diarrhea, which is a possible complication after surgery of the gall bladder would further make the weight loss more pronounced.
I will like that you follow up with a Gastroenterologist to evaluate fully the biliary system for possible abnormalities like stricture,stones, stenosis, etc. If it is possible an ERCP and other imaging studies to evaluate this structure should be strongly considered.
In all, this seems to be related to a biliary tract abnormality. Consult a Gastroenterologist for full evaluation and treatment.
