What Diet Should Be Given To A Diabetic?

Question: I have 70yo type 1 diabetic coming for lunch tomorrow. His diabetes is well controlled but he has recently had a stroke. I asked about diet no no's but was told nothing of consequence. What should NOT appear in my muffins?? No sugar?? I was going to make savoury . . . . . . .BUT very cheesy so high in fat and salt, also another guest has motor neurones (lower half) and does not seem to eat a lot but has had AAA surgery. Sorry to ask you guys but did not get a reply from dietitian website and don't want to make anyone unwell.

Detailed Answer:
Dear madam i can understand your concern.The logic for cooking is very simple for diabetes-use whole grain or multigrain flour. You can use some salmon or tuna sauce

Please don't prepare any juices.you can also plan salad with lettuce, little carrot and beat root, pepper, olive oil, with tuna flakes.
Please don't use potato in any dish. Try to use as much little salt as possible. Savoury pancakes with ham and egg avoid cheese, use only whole wheat flour.
In making muffin don't use sugar use nuts and berries like Almond Apricot blue berries.

1.Make a veggie flatbread. Sauté some frozen or fresh veggies and pile them onto a pre made whole wheat pizza crust (or a whole wheat pita will also work!) and top with reduced-fat mozzarella cheese and tomato slices. Bake in the oven until the cheese melts.

2.Try chicken tacos. Use rotisserie chicken or defrost and roast up some frozen chicken. Fill a corn or whole wheat tortilla with shredded chicken, tomatoes, lettuce, fresh cilantro and black beans. If you want, top it all with a spoonful of salsa and some non-fat plain Greek yogurt.

3.If you want to go for meat opt for lean meat grilled is better than oil fry.

keep a fish item as fish is good for people who have motor neuron disease
