Your concerns are valid. With such a diet one would need to pay extra attention to getting sufficient calories and protein in for the children's' busy, growing lifestyle. In addition, the following nutrients may be problematic in getting into a young vegan's body: iron, calcium, vitamin D, B12, omega 3 fatty acids.
I would just encourage her to become as educated on the subject as she can and to consult with a dietitian if possible to assure her growing children get all their nutrients either by food and/ or supplements to grow healthfully and the proper rate.
