Could Severe Pain In Abdomen Along With Fever Be Due To Ulcerative Colitis?

Hello husband is 43 years old. Was diagnosised with celiac over 8 yrs ago. he watched his diet very closely. We had Mexican food last Thursday, by midnight he was in a lot of stomach pain. He said he has contraction feeling and is in a lot of pain. We went to the ER Friday not thinking he had food poisoning. The ER gave him meds to help but as of now they have not help. he has been feeling worse today. We are back in the ER. His temp is 99, blood works says no flu, his appenixs have already been removed. Could this be something with his spleen or alcerative colitis?
