I have a UTI, and am taking lecithin now for 7 days. Last night I had strong pain like I had to urinate so badly it woke me and I was up for a while. I drank a lot of water and it subsided. I have probably not been drinking enough water. Could the pain be due to that or is the lecithin not working? I drank a lot of water today and have been better.

No, lecithin can not cause painful urination.
It is aminoacid (protein). So it is good for body and won't cause pain during micturation. Your pain is mostly due to dehydration. Dehydration (less fluid intake) causes concentrated urine. And this can precipitate infection. This in turn causes painful urination.
Your pain is relieved after drinking plenty of water.
So try to drink plenty of fluids orally and keep yourself hydrated.
This will prevent dehydration, concentrated urine and hence urine infection.
