When I refrigerate left-over fish, baked pompano, for example, a gelatinous goo forms. The gelatinous goo liquifies when the left-over fish is microwaved. Sometimes I scrape off the goo before microwaving. Is the gelatinous goo healthy to eat, or is it an artery-clogging goo?
It must be most probably the fat which oozes out of meat and fish. If you are over concerned about your fat and calories you can give it a pass. It might be rich in fat and cholesterol. Better to scrape it off. Take care.
