I have what feels to be a flap of skin inside my mouth, on my right cheek. It is positioned so that it could be possible to be from a bite, and produces a sharp pain when pressure is given, either by inflating the cheek, or rubbing over it with my tongue. I'm worried I've shaved off some of the internal flesh and now have a hanging piece of tissue with exposed nerves or something like that.

Flap on the inside of right cheek can be most probably due to soft tissue overgrowth leading to fibroma formation. Due to continuous biting with teeth it can be become painful and inflamed. Do not worry as it does not expose the nerve and although it is harmless but can be irritant.
So my suggestion is to consult an oral surgeon and get evaluated. It has to be removed by a minor surgical procedure. As of now apply pain relieving gels like Orajel over it.
