I have gone through your query and can understand your health concerns..
As per your complain and presentation of symptoms it is pointing towards a condition known as SMELLY HAIR SYNDROME in which there is a very foul smell from the
scalp and hairs which is so strong that is clearly noticeable..
BUT it is not seen to be associated with taking of antibiotics or probiotics and in your case it can be coincidentally happening together but antibiotics is not the cause for it..
It can happen due to a few reasons like:

Fungal infection. At times ringworm infection is also the cause of it..
2. Overactive oil glands.
3. Bacterial infection.
4. Lack of nutrition.
5.
Hormonal Imbalances etc..
6. Using strong chemical containing hair products that can over activate the oil glands or some products causing allergic side effects.
For this problem you need to consult a Dermatlogist and get evaluated..
In case of Smelly hair syndrome caused by any particular cause as i described above the treatment will be based on treating the cause and it can be done only after proper examination..
In case if it is happening without any specific cause you should use sulphur based shampoos or soaps for a week and alternating next week with a mild shampoo..
Avoid using conditioners on hair roots and also avoid overuse..
Limit the use of hair products...

Frequently change the towels and pillow covers for better hygiene..
Maintain dryness in scalp and do not tie wet hairs..
