What Causes Gluten Sensitivity?

Hi,
I decided to go off wheat and dairy because I was feeling so fatigued, and had headaches. Instantly I felt better. I thought it was just dairy allergy, so I went back to eating wheat, after I eat wheat, I have heartburn, fatigue, and headaches. I was told that I was very deficient in Vitamin D, and Iron by my primary physician. Do I have a gluten sensitivity as well as dairy?

Iron deficiency anaemia is a symptom of gluten sensitivity. Vitamin D deficiency occurs both in gluten sensitivity as well as due to low intake of dairy products. I would suggest you to rule out the possibility of gluten sensitivity first by undergoing certain tests. Consult a gastroenterologist who might recommend you endoscopic biopsy of small intestines to confirm gluten sensitivity. If you are lactose intolerant, then it is very likely that you will have abdominal symptoms like constipation, diarrhoea, bloating, abdominal cramps or gas formation on consuming milk, otherwise it is unlikely that you have intolerance to milk.
