I have reviewed your query and here is my advice.
Your symptoms seem to me as Postcholecystectomy Syndrome which is very common following
gallbladder surgery for first 2 years.
Actually, bile is refluxing back in your stomach and causing upset. Also flow of bile acid is unregulated in the lower gastrointestinal tract which causing all the main symptoms you are currently facing.
As you have already tried multiple medications for this including Omeprazole,
Esomeprazole, Ranitidine,
Sucralfate etcetera, there is very little left to manage. But, I would recommend trying Psyllium/Natural Fiber and
Dexlansoprazole (DDR) medicine.
Also, there are various bile acid sequestrants including
Cholestyramine which may help a little bit. And if you feel the same despite all these measures, I would suggest for Endoscopy to see actually which is going on in your upper gastrointestinal tract.
Most of my patients also report improvement on propping the bed up while sleeping.
