What Could Cause Food Allergies ?

I recently had complete hysterectomy. Prior to that I had some food allergies (chicken [but not the bird], beef and cows, green beans, corn, wheat, oats, rice, carrots, cinnamon and peanuts which all registered a #1 on the allergy scale) which I kept in check by elimination and medicine (10 mg Zyrtec/day). I still eat those foods but look for those which have no added chemicals, genetic wrangling, etc. Now that I am healed from the surgery, I notice that I have not had any type of allergic reaction (anaphlaxis) to these foods. I have not eaten any more of these foods than I did prior to my surgery and I am still taking Zyrtec every day. However, I know which foods will trigger a reaction quicker than others and find it odd that the hamburger ('bar burger') that I ate last night didn't cause a reaction. Is it too much to think that my allergies are gone? Should I have allergy testing done again, as it has been quite some time since I have been tested. I have not had these allergies all of my life, but they began about 20 years ago after I had my daughter.
