I am sorry you are having so many problems. Yes, when there are multiple problems like this, sometimes our healthcare system is not well equipped to try to find an overarching cause but rather treat symptoms independently. I personally have had problems with this so I know from experience.
There are two specialists that might look into what possible broader picture might be going on. If possible, try to see ones who are with a major university or large clinic as they might be willing to try to sort this out. However, a good community doctor who is willing to take the time and think about things can be good too.
1. Allergist: Because of the environmental and food sensitivities and the rashes.
2. Endocrinologist: Because of the thyroid problems, hair loss, and rashes.
The stomach ulcers might be related to meds you have taken for the problems, or could be somehow related to the other problems.
I finally had a university immunology-infectious disease doctor sort out my health problems, not because it was an infectious disease but because of his thoroughness and large fund of knowledge.
