I know you said I should be concerned if I have a delayed period. If my period does start, then it would not be an ectopic pregnancy? How long after a missed period, before the symptoms start? Just want to get a better understanding, since the doctor never fully explained all this to me.

Yes, you should be concerned only if you have delayed periods.
Immediately after you will have a delayed period you should take a urine pregnancy test at home.
And if pregnancy test will be positive then you should contact a Gynecologist to do a transvaginal scan to exclude ectopic pregnancy(since it's an emergency situation so no exact time frame is there but immediate attention and prompt check-up for diagnosis and management).
Meanwhile, since your periods are regular then there are no chances for an ectopic pregnancy.
