I have gone through your query with diligence and would like you to know that I am here to help. In my opinion there could be 2 possibilities, both of which I wish to explain:
1. May be every time this individual was on amoxicillin he/she was poorly nutritioned or even losing weight due to the illness (e.g. ammonia smell)
or
2. It could also be an indicator of some underlying chronic condition that could be upset due to the illness, and may require ruling out (e.g. acetone smell in urine, breath, sweat, etc. associated with diabetes)
These are possibilities that may require some consideration, mainly because the individual in speaking has not taken amoxicillin and is emiting the same smell he/she did the last time they were on amoxicillin, so may be it is not the amoxicillin causing the smell.

So it is quite possible that you have been either losing weight or have had a poor level of nutrition that has resulted in the smell.
The repeated illnesses and poor level of immunity could be due to any of the following:
+Medications that are causing an immunocompromised state
+Chemo or radiotherapy
+Chronic conditions causing lowering of immunity
+Poor weather conditions
+Poor living conditions
+Stress
+Mental disturbances like depression, etc.
+Poor nutrition (poor intake)
Unfortunately sir, with such a vague presentation and not being able to find out why you seem to be falling ill so often, you will have to take some time off from work for your own well being. I am also in a profession where numerous people depend on me always exhibiting good health and being present at work so I can help those who are not in good health. But at times, in order to help others we have to help ourselves first.
So I would urge you to try and take some time off from work and report to a clinic, doctor or hospital in order to carry out some laboratory investigations (primarily, as I cannot do that sitting here), and secondly for a more elaborate discussion with a healthcare provider.
