I have a shifting pain in my mouth and throat.

Can be TMJ inflammation too.

I read it carefully and I understand your concern.

I agree that the pain may be due to gum inflammation.
If it lasts more then one week it can be related also with the temporo-mandibular joint, since it changes when you eat.

In both cases the treatment would be painkillers. I generally suggest Ibuprofen 400mg, 1 tablet every 8 hours for 1 week and then as needed after.
Apply cold compresses locally.

If worse or not better see a local physician to perform another check up or do further tests.
