Fat stranding is due to edema of fat and engorgement of lymphatics.Edematous fat around the colon gives increased attenuation in CT scan which is referred as pericolonic fat stranding.
In your case fat stranding is due to diverticulitis attack.Diverticulitis is an inflammation of diverticulum(colonic outpouching).During inflammation,permeability of membrane increases which causes extravasation of fluid in surrounding structures like fat.Accumulated fluid in fat leads to stranding appearance in CT Scan.
