I further found that enlargement of liver could be due to hepatatis. However, i remember some 4-6 yrs back there was a govt. initiative in my area where volunteers had come home and injected vaccination for hepatatis. That was a course for 3 months and in final month they gave an additional vaccination saying this would prevent from any type of hepatatis for atleast 10 yrs.
My ask is despite of taking vaccination is there's possibility that one would get affected by hepatatis?
Additional info - we also had liver function test done and that shows fine results without anything for concern. She's a non-alcoholic and non-smoker.

I can understand your doubts about your mother's USG report
1) 7cm of liver span is considered normal for pediatric age group. 11-13cm of liver span is considered normal for adult persons. For old age patients this will be around 10-12cm.
2) 15.9 (16)cm of liver span for 60 years old female female is considered as hepatomegaly. As you already know, this may be due to many reasons.
3) What about liver surface (rough/smooth), liver border (sharp/blunt) on USG abdomen? Did USG mention that liver is "Fatty liver"? Does your mother have right upper abdominal heaviness/discomfort? Answers to these questions are important to find appropriate cause for hepatomegaly.
4) You mentioned about vaccine. It is for prevention of hepatitis from Hepatitis-B virus only. There are number of causes which can cause hepatitis i.e. alcohol, hepatitis-C virus, severe fat infiltration etc.That vaccine would prevent hepatitis from Hepatitis-B virus only.

1) No. There is no possibility of having hepatitis to you mother.
2) USG indicates grade-1 fatty liver i.e. fat deposition in liver tissue due to abnormal fat metabolism in liver or high amount of fat in blood. Grade-1 fatty liver is reversible condition.
3) Normal liver function test in background of grade-1 fatty liver suggest that liver function is not compromised.
4) I suggest her to do lipid profile test to check blood level of different cholesterols as fatty liver can occur in high level of cholesterol.
5) This condition can be reverted by intermittent fasting, regular exercise, high protein diet, low fat diet, use of omega-3 fatty acid containing oil for food preparation.

Here I can read two attached files but none of them have results of lipid profile test.
If it is not done then you can plan it in future along with other investigation also as present treatment will not be decided on that values. Importance of that test is just to confirm the reason of fatty liver.
Otherwise, above mentioned lifestyle and diet related changes must be started to revert the fatty liver condition as much as possible. Here keep in mind that it is not possible to revert 100% normal liver tissue.

there will be no any future consequences upon not restoring to 100%.
Her triglyceride level is slightly elevated which might be associated with fatty liver.
along with above mentioned lifestyle and diet modifications she should be consulted by physician for marginal high level of triglycerides in blood.
