Good Day Doctors, I Had 500 Mg Amoxicillin 3X30 Days

Good Day Doctors, I had 500 mg amoxicillin 3X30 days two years ago.
Shortly thereafter I noticed my alt and ast levels were slightly elevated by about 100 points over the normal limit each, with SGPT/ALT a little higher than SGOT/AST. I feel bloated, full, nausea, weak.
All liver tests and $2000 later: Fibroscan, CT, a plethora of blood tests, elastography, sonograph except for a biopsy were done. All picture perfect.
Now, when I have Mox, botled (so called) ayurvedic tonics or Homeopathy my sgpt/alt starts peeking over the upper limit of the Liver fn test even after a 4 day course. Only when I eat boiled veggies diet, low salt/sugar, the SGPT/ALT normalises in 3-4 days. I also have 400mg vit E a day.
Being a social drinker and a sailor the doctors have labelled me as having NASH or NAFLD or mild fatty liver. I have acidity and have omeprazole (sompraz) 40mg 1/day.
I'd love to understand why my liver is so weak/sensitive suddenly, what caused this change and how to reverse this phenomenon. I did take cepodem XP for a viral throat infection and my ALT/AST remained normal.
I'm frustrated and anxious. Being an engineer-sailor, people think I'm some drunkard. Ironically I have had a few beers one night recently and my LFT remained normal!!
